This Canadian Bacon and Pineapple Quiche features a flaky, buttery crust that is filled with a rich custardy filling studded with ham, juicy pineapple, and laced with Swiss cheese.  The sweet and tangy pineapple chunks add a burst of sunshine to the savory Canadian bacon, creating a flavor profile that’s both playful and utterly delicious.

This recipe calls for Swiss cheese but feel free to swap it out for some orange or white Cheddar or go for a sharper flavor profile by opting for Gruyere.

Delicious both warm or at room temperature, it’s perfect for taking a long for picnics or to potlucks.  It’s also a great make-ahead meal option because not only does it reheat beautifully, it can also be frozen for up to 3 months, left to thaw in the refrigerator overnight, and then reheated.  Serve it for breakfast, brunch, lunch or dinner and to round out the meal you can serve it with a veggie of your choice or a fresh green salad.
